Chocolate Bliss Balls.
I'm 105% a chocolate addict and will gladly eat chocolate for breakfast, lunch and dinner. Sadly though, chocolate isn't usually considered healthy enough to justify doing that, but fear not because I have set out to change that because not only are these bliss balls full of chocolate, they're also vegan, refined sugar free, oil free and gluten free!!! WINNING.
These bliss balls are super quick and easy to make and require no baking or fancy equipment aside from a blender. They're perfect for a little gift to family and friends this festive season and also perfect to sit on the couch and devour all on your lonesome, just as I currently am.
Ingredients;
Peanut Butter Balls (makes approx. 14 balls)
12 medjool dates (pitted)
3 tbsp pure state peanut butter
3 tbsp raw cacao powder
3 tbsp rice malt syrup
1 tbsp pure maple syrup
+ some extra cacao for rolling
1. Put all the ingredients, minus the extra cacao in the blender and blend until everything is well combined. If the mixture is too sticky (this will vary depending on how soft and juicy your dates were) add a little extra rice malt syrup.
2. Take a large tray and line with baking paper/parchment. Take approx. 1 tbsp of the blended mixture and roll into a small ball using your (clean) hands. Gently roll in some extra cacao powder then place on the tray.
3. When all the balls are rolled, place them in the fridge for at least 30 minutes to set.
Coconut and Macadamia Balls (makes approx. 14 balls)
12 medjool dates (pitted)
1 cup raw macadamia nuts
1/2 cup shredded coconut
3 tbsp raw cacao powder
3 tbsp rice malt syrup
2 tbsp pure maple syrup
+ some extra shredded coconut for rolling
1. As above, put all the ingredients, minus the extra coconut in the blender and blend until everything is well combined. If the mixture is too sticky (this will vary depending on how soft and juicy your dates were) add a little extra rice malt syrup.
