I love the whole concept of 15 minute meals but realistically if you're actually making a meal in 15 minutes, then you are a god/goddess. I actually remember watching this show once where a lady was testing all of Jamie Oliver's 15 minute meals and some of them literally took her 2 hours to make. 15 minute meals = sham. 

Now I'm not going to claim that this recipe will take you 15 minutes, because realistically that probably won't happen and then you'll think I'm a big hypocrite for slamming other supposedly 15 minute meal recipe creators. So I'm going to state right here and now that this is potentially not a 15 minute meal, but that isn't to say it cannot be made in 15 minutes. However!!!! This recipe is inspired by the whole concept of a quick and easy recipe, so that's exactly what it is. Quick and easy and, most importantly, delicious.

In a testament to the easy peasy-ness of this recipe, I work for a law firm in the afternoons, and because I start at 12, I don't get a designated lunch break. I snack throughout the afternoon but by the time I finish around 5pm, holy heck am I ravenous. Like, I need food right then and there, no time for waiting. Inevitably I will make this super flexible nacho/taco/burrito mixture at least once a week because it's the next best thing to leftovers in terms of how quick it is to make! Also of note is that this is perfect for the heavenly trifecta of nachos, tacos AND burritos. If that's not a dream come true then nothing is.




Ingredients;

425gm red kidney beans
400gm salt-free diced tomatoes
3 cloves garlic, crushed
1 brown onion
3 tsp paprika
1 tsp chilli flakes

1. Dice the onion and mince the garlic. Add the onion and 2 of the minced garlic cloves to a pan over medium heat and cook until slightly brown. (I do not use oil in the pan, rather I keep a close eye to make sure nothing burns, however if you prefer you could use 1 tbsp oil in the pan).
2. Take the beans and rinse with cold water really well. Washing them gets rid of all the nasty stuff that typically makes you pass a lot of gas a few hours later (no one wants that!!!). Add to the pan along with the diced tomato, paprika, and chilli flakes. Allow to simmer over a medium to low heat for approx. 10 minutes. DONE! EASY PEASY PASS THE BURRITO PLEASY. 


Bonus Guacamole Recipe!! (EXCITING)
1 avocado

2 shallots (spring onions)

1. While the bean mixture is cooking, take the avocado and slice in half. Remove the seed and scoop the flesh into a blender. Roughly slice the shallots and add to the blender. Blend this until well combined with no chunks of shallot. You might need to scrape the sides down a few times during the blending.

Serve as either nachos, tacos or burritos! The options are endless. Go to town. Eat all the food.
